White pepper is milder and less spicy than its more commonly used cousin, black pepper, with a simpler, cleaner flavour and a subtly fermented depth. It is perfect when you still want a peppery bite in a dish but without highly visible black flecks.
White peppercorns are made from the same berries as black pepper, from the vine Piper nigrum. But while black peppercorns are picked and dried before they are ripe, white pepper is made from fully ripe berries which are soaked and skinned to remove the outer layer and some of their volatile oils.
Choose whole peppercorns for the mill, or the ready ground powder milled fine and smooth so it blends straight into the pot. Whole corns keep their aroma longest, while the powder saves a step when you are cooking at speed.
The pale colour makes white pepper ideal for light dishes where dark specks would stand out. Stir it into white sauces and bechamel, mashed potatoes, mayonnaise, fish dishes, and both clear and creamy soups, so the seasoning stays even and blends in without a trace.
Add a pinch toward the end of cooking so the aroma stays bright, then adjust the amount to taste. 100% natural. We search around the world for the finest produce.
