Psyllium Husk

  • Psyllium husk comes from the seed husks of the Plantago ovata plant. When mixed with liquid it thickens into a gel, and each teaspoon provides 4g of dietary fibre, representing 14% of the recommended daily intake. Unlike many other fibre products that contain either soluble or insoluble fibre, psyllium husk naturally supplies both.
  • Choose the loose husk, or the finely milled powder ground to a smooth, neutral-tasting texture that blends cleanly into doughs and batters without changing their flavour. Both are the same husk, so pick the texture that suits the recipe.
  • Reach for it as a gluten-free baking binder. Stirred into liquid it swells and turns elastic, mimicking the stretch that gluten gives wheat dough, so free-from breads, rolls, flatbreads and pizza bases hold together and keep a soft, sliceable crumb instead of falling apart. The milled powder disperses fastest here.
  • It also adds structure to almond flour and coconut flour recipes. A small amount builds chew and lift in low-carb seed breads, crackers, wraps and muffins, giving these bakes the body that alternative flours alone cannot provide. Soaked with water for ten to fifteen minutes it sets into a thick gel that binds veggie patties and batters, or thickens smoothies, soups and homemade sauces.
