Fenugreek

  • Sweet and nutty with strong notes of maple, fenugreek adds a complex sweetness to spice mixes. It also has a special ability to complement other flavours, making them seem fuller and deeper. The maple edge comes from a natural compound called sotolon, the same molecule behind the aroma of maple syrup, and it carries a mild bitterness alongside it.
  • Our fenugreek is certified organic and grown using traditional methods, sourced from an artisan farm where quality is of the utmost importance. Choose whole seeds, or the same seed milled to a fine culinary powder with nothing else added, no fillers and no anti-caking agents.
  • Fenugreek gives flavour to Indian and Thai curry blends and to beverages, candies and desserts. You can add a touch to meat dishes, pickles, baked goods and puddings, or work it into homemade curry powder, sambar powder, garam masala, panch phoron and dry rubs. The savoury maple note also carries imitation maple flavouring in baking.
  • Whole seeds are rich in protein and can be eaten as they are, or toasted before grinding to soften the bitterness. Ground seed blends and dissolves faster than whole methi, so measure with a light hand and begin with about a quarter teaspoon. Warming either form briefly in oil rounds out the aroma. It sits well alongside cumin, coriander, turmeric and paprika.
